pan-fried BRUSSELS SPROUTS WITH salpicão sausage
Ingredients

550 grams raw Brussels Sprouts (peeled & halved)

100 grams salpicão Portuguese sausage* (cut into small cubes)

1 tablespoon Olive Oil

4 tablespoons (or 60ml) red wine

50 grams Green Beans (for extra texture)
*If you can’t find this Portuguese sausage, you can use smoked bacon lardons or pancetta instead
Method

Heat up a frying pan with the olive oil until hot. Add then add the diced sausage* and fry for 5 minutes or until crispy.

Then add the halved sprouts and green beans. Stir for a few minutes, so to sear them with some colour. Then add the wine to deglaze the pan.

Stir and cover the pan for 5 minutes, till the wine has evaporated and the sprouts and beans are tender.

Finally season with pepper to taste. Be careful not to over salt. You may find the dish salty enough, as the sausage/bacon has provided that already.

Enjoy this as a tasty side dish to accompany fish, grilled steak or chicken breast.
Even enjoyable as a main dish served with freshly boiled rice.
